We've all been eating clean and healthy in the JBD offices lately as a part of our new year goals! So we found this recipe and gave it a try at the office and they were just delicious and also didn't make us feel guilty for indulging!
This 5 ingredient choc chip cookie dough bites recipe is vegan, gluten free, dairy free, and guilt free (LOL).
1 2/3 cups + 1 teaspoon gluten free oat flour
3 tablespoons melted coconut oil
3 tablespoons pure maple syrup
1 1/2 teaspoons pure vanilla extract
1 1/4 cup + 2 tablespoons vegan chocolate chips (mini and regular)
1.) Add oat flour, maple syrup, oil and vanilla to a medium bowl. Using a spoon, stir until thickened and well incorporated. If needed, use a rubber spatula to fold together into a cohesive dough. Fold in ¼ cup + 2 tablespoons chocolate chips.
2.) Using a cookie scoop, scoop and drop balls of dough onto the prepared baking sheet. Using your hands, shape into spheres, or keep as is if you like the shape. Optionally, dot with 2 tablespoons chocolate chips.
3.) Allow too firm up for about 5 minutes. Enjoy!
Cookie dough balls are best enjoyed the firs day; Day 2 and on they can become much drier, heat in 10 second increments in microwave until warm.
Store for 1-2 weeks in an airtight container at room tempt. or in the refrigerator.
We hope you enjoy these treats as much as we did! Tag us on your socials if you do re-create the recipe.
